Kuku Paka
Ingredients
- 6 EggSolutions Peeled Hard Cooked eggs
- 2 x half chicken
- 1.5 liter coconut milk
- 2 cups chicken stock
- 1 large onion, diced
- 4 serrano peppers, stem removed rough chop
- 2 tbsp garlic, minced
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1 tsp black pepper
- ½ tsp turmeric
- 1 tbsp salt
- 1 lemon, zested and juiced
- 1 bunch cilantro, rough chop
Directions
- Cut each ½ chicken into 4 pieces (drumstick, thigh, breast in half leaving wing on). Trim any bones.
- In a blender, place onion, garlic, chilies, cumin, coriander, salt, pepper, stems of cilantro. Blend until smooth.
- In a large pot place to cut chicken, cover with the liquid from the blender and 1.5 liter of coconut milk. Bring the pot up to a low simmer and reduce by 1/3.
- Add lemon juice, lemon zest, chopped cilantro, and EggSolutions Peeled Hard Cooked eggs. Continue to simmer for 3-5 minutes.
- Serve with rice or crusty bread.
