In a pan heat olive oil. Add shallots, mushrooms and roasted garlic. Cook on medium heat for 2 minutes.
Add the scrambled egg mix, stirring well. Lower your heat. Add the goat cheese, baby spinach and season with salt and freshly cracked pepper. Cook for 3-4 minutes.
Top with a drizzle of hot honey
