Classic Egg Salad

Ingredients

  • 1 dozen hard cooked eggs or XX cups Frozen diced Eggs, thawed
  • ½ c. mayonnaise
  • 1 tsp lemon zest
  • 1½ tsp fresh lemon juice
  • ⅔ c. celery, finely diced
  • ½ c. scallions, finely sliced
  • 1 tsp fresh parsley leaves, minced
  • salt & pepper, to taste

Directions

  1. Combine hard cooked eggs, mayonnaise, lemon juice, celery, scallions and parsley in a medium bowl.
  2. Using your hands, squeeze eggs through your fingers, mixing together until reduced to desired consistency.
  3. Alternatively, smash and mix with a firm whisk.
  4. Season generously with salt and pepper.
  5. Serve on whole wheat bread or with crackers.

Serves 6-8.
