Curried Egg Salad

Ingredients

  • 1 dozen hard cooked eggs, diced or XX cups Frozen diced Eggs, thawed
  • 6 tbsp olive oil
  • 4 tsp Dijon mustard
  • 1 tsp Kosher salt
  • ¼ tsp black pepper
  • 2 tsp curry powder
  • 4 tbsp golden raisins
  • 4 tbsp dried cranberries
  • 2 tbsp green onion

Directions

  1. In a small bowl, combine the eggs with the remaining ingredients and stir well to combine.

    Serve on whole wheat bread or with crackers.

Serves 6-8.
