Spinach and Tomato Quiche

Ingredients

  • 1 L EggSolutions® ESL Liquid Whole Egg
  • 135 mL 2% milk
  • 2 quiche shells
  • 3 cups tomatoes, diced
  • 1-1/2 cups spinach, chopped
  • 1 cup shredded cheese
  • 2 tsp garlic powder
  • 2 tsp salt (to taste)
  • 1 tsp pepper (to taste)
NOTE: Option to use thawed EggSolutions® Scrambled Egg Mix instead of liquid egg, milk and salt.

Directions

  1. Prepare egg filling.In a mixing bowl, whisk together all ingredients. 
  2. Prepare quiches.Fill quiche shells with egg mixture then sprinkle with shredded cheese.
  3. Bake and serve.Bake at 350°F (175°C) for about 50 minutes or until quiche reaches an internal temperature of 165°F (74°C) Serve warm.
