Peppered Strawberry Layered Egg Crêpe

Ingredients

  • 100 EggSolutions Grilled Egg Sheets
  • 1½ L 35% cream
  • 1 tbsp cinnamon
  • ½ cup maple syrup
  • 6 lbs strawberries
  • 1 cup orange juice
  • 2 tbsp orange vodka
  • 2 tbsp coarse ground black pepper

Directions

  1. Wash strawberries and cut each in half.
  2. Mix orange juice, vodka and black pepper together, then toss with strawberries. Allow to marinate for at least 2 hours.
  3. Heat egg sheets to an internal temperature of 165°F (74°C) on a grill, in a microwave, or in an oven pre-heated to 300°F (139°C).
  4. Place 30% cream into a chilled mixing bowl and whip until peaks form. Add cinnamon and maple syrup, then continue whipping for a few minutes. Do not over whip.
  5. Cut each egg square in half to form 2 squares.
  6. Place 1 egg square on a plate. Pipe whipped cream onto square to cover. Top cream with strawberries, then place another egg square on top.
  7. Repeat to create additional layers, as desired.
  8. Garnish with strawberries and whipped cream and serve.
