  1. Prepare scrambled eggs.
  2. Immersing bag of scrambled egg mix in hot water (75°C (167°F)) in a large stock pot or steam kettle.
  3. Simmer for about 35 mins (from thawed) or 50 mins (from frozen), stirring or shaking bags about every 5 minutes for uniform cook.
  4. When cooked to desired texture, knead bags to break up eggs. Note: Do not overcook. Eggs will continue to cook while being held.
  5. Prepare veggies and meat.
  6. Melt butter in 12-inchnonstick skillet until sizzling; add onion and peppers.
  7. Cook 2-3 minutes over medium-high heat, stirring occasionally, until vegetables are crisply tender. Add ham.
  8. Continue cooking 1 minute.
  9. Combine and serve.
  10. Open bag and pour eggs into a bowl.
  11. Add cheese and veggie and ham mixture.
  12. Mix well and serve.
