Broccolini, Grilled Halloumi, Pancetta & Saffron Mini Quiche

Ingredients

  • 720ML EggSolutions Liquid Whole Egg
  • 1/4 cup cook chopped broccolini
  • 1/4 cup cubed grilled halloumi cheese
  • 1/4 rendered bank attack cubes
  • 1 pinch of saffron
  • 1 pinch fresh thyme
  • 1/2 tablespoon roasted garlic

Directions

  1. Preheat your oven to 325F.
  2. Grease your silicone muffin molds with some olive oil.
  3. Add the saffron to the egg mixture and mix well.
  4. In a bowl mix the broccolini, pancetta, roasted garlic, cheese, fresh thyme and season with salt and pepper.
  5. Add 2 tablespoons of the mixture to each mold.
  6. Fill with 1/2 cup of egg mixture in each mold.
  7. Cook for 25 – 30 minutes at 325F.
