Scrambled Eggs With Shitake Mushrooms

Ingredients

  • 2 cups EggSolutions scrambled egg mix
  • 1 cup diced zucchini​
  • 1 tsp diced shallots
  • 1 tbsp olive oil
  • 1 cup baby spinach
  • 1 cup sliced shiitake mushrooms
  • 1 tsp roasted garlic
  • ¼ cup crumbled goat cheese
  • 1 tsp hot honey
  • Salt and pepper to taste

Directions

  1. In a pan heat olive oil. Add shallots, mushrooms and roasted garlic. Cook on medium heat for 2 minutes.​
  2. Add the scrambled egg mix, stirring well. Lower your heat. Add the goat cheese, baby spinach and season with salt and freshly cracked pepper. Cook for 3-4 minutes.
  3. Top with a drizzle of hot honey​
  4. Enjoy!
