Sweet Potato Avocado Fries

Ingredients

  • 15 (medium size) Sweet potato Peeled OR 25 Avocado, Halved + cored
  • 750g AP flour
  • 50g Kosher salt
  • 20g Garlic powder
  • 20g Cumin powder
  • 1 container (2.2lb) Egg Solutions Liquid Egg Whites
  • 300g Panko bread crumbs

Directions

  1. Sweet potato fries: cut the sweet potato into 1cm by 2cm planks.
  2. Avocado fries: take the avocado out of the skin with a spoon, slice 1cm slices lengthwise.
  3. Mix all of the dry ingredients except for the panko in a large bowl.
  4. Pour the egg whites into a shallow pan.
  5. Put the panko in a large bowl.
  6. Dredge the vegetable pieces: dip in the egg whites, roll in the flour mixture, dip in egg whites again, toss in the panko and make sure they are evenly coated.
  7. Place the coated piece on a sheet pan with parchment.
  8. Sweet potato fries: bake at 425°F for 15-20min, flipping after 10 min, until cooked through.
  9. Avocado fries: bake as 425°F for 12min, flipping the pieces over after 6min.
  10. Place under a broiler for 1 min if you wish to have additional color.
